It contains alkaline potassium, magnesium, calcium. Studies have been done testing the antacid effect of cucumber. Interestingly it has been seen that cucumber has a significant, and longer duration of consistent acid fighting and neutralizing capacity.
The highest antacid capacity was shown by cold milk and broccoli. This was comparable to ENO and sodium bicarbonate.
